I'd call this week's meals as a "lazy man's healthy meal planning". Minimal effort and maximum flavour. Plus, lots of vegetarian options!
I gush about Valentines Day and run through my pretty healthy week with you.
Okay okay. So this was a lazy week. So what! Sometimes those are needed. But as far as lazy weeks go, I have to say, it wasn't too bad. I wasn't eating pizza all day every day, even if that is my dream. And there aren't any recipes for the weekend because I'm taking a break from cooking to relax on Valentines weekend! But there are lots of yummy recipes coming up next week, so stay tuned.
This week we actually ate pretty healthy, and had a few meatless nights. What's your fave meatless recipe? Let me know in the comments so I can try it next!
We stayed in for New Years Eve, so rather than making a meal like normal and then being hungry from being up so late, I decided to make a bunch of snacky, appetiser kinds of foods to keep us going. Back to some tried and true faves with a few new recipes to try out. Not an exceptionally healthy week, but a tasty one.
All in all, this was a pretty healthy week. The main focus: CHICKEN. Chicken with pesto. Chicken on pizza. Ooey gooey stuffed chicken. Light lemony chicken. Winner winner chicken dinner!
