What I Ate This Week: 22-27 February
I'd call this week's meals as a "lazy man's healthy meal planning". Minimal effort and maximum flavour. Plus, lots of vegetarian options!
MONDAY: VEGGIE STUFFED STEAK ROLLS
I've made this recipe before, and it came out delicious. I decided to change a few things this time around to kind of simplify the process. I only seasoned the beef with salt and pepper, and skipped the marinade. I used a carrot, courgette, onion, green onions, red bell pepper, and mushrooms. After chopping them up I cooked them off in olive oil, salt, pepper, and minced garlic. I took the veggies out of the pan, wrapped them in the steak, and baked them in the oven this time. For the sauce, I minced a little bit more garlic and added it into the pan with some balsamic vinegar, rosemary, and veggie broth. When the steak rolls were done I drizzled the sauce over top and served with a few diced potatoes. Yum! I preferred this method to the original recipe.
TUESDAY: COURGETTE PIZZAS
I've seen this concept a lot on the internet before. Substituting pizza crust for a courgette cut in half. I scooped out the fleshy bit on the inside and added that to a store-bought sauce with low sugar and sodium (hence the laziness). I blitzed it all together in a blender and spooned it into the courgettes. I chose to go meatless and top ours with mozzarella, tomatoes, and fresh basil. I don't know that I'd ever crave this recipe, but it wasn't bad either! It'd be nice in the summer for something light and refreshing.
WEDNESDAY: RED PESTO PASTA
Again, I was super lazy with this recipe and just grabbed a slightly healthier store-bought red pesto. I added some chicken and broccoli for a little extra substance and that's all it took! Make sure to use a whole wheat pasta to keep this on the healthier side.
THURSDAY: CHICKEN AND INSALATA CAPRESE
For Thursday I went back to the basics. A simple caprese salad on the side and a simple chicken breast. I seasoned the chicken with paprika, cayenne, turmeric, salt, pepper, and Italian seasoning. Plus I made a little glaze with the juice of an orange and lemon, a splash of balsamic, and some minced garlic. Simple, easy, and super yummy!
FRIDAY: ROSEMARY AND THYME TURKEY
We had some thinly cut turkey breasts to use, so I found this recipe to try out. On the side I chopped up some broccoli, carrots, and potatoes and baked them in the oven with some olive oil, salt, pepper, and parsley. Super basic, and something different!
SATURDAY: KALE CAESAR SALAD
My last recipe of the week to try was this take on a caesar salad with kale. Unfortunately I couldn't find whole wheat croutons, but it's a pretty healthy recipe otherwise so I didn't mind the little cheat. I love the texture of this and the super light, fresh flavour. Yum!
